Two Great Chicken Grilling Recipes
It's that time of year again: barbecue season. Sure you can always grill up some classic hamburgers or hotdogs, but what fun is that? Instead, you should use one of these creative grilling recipes for a delicious meal made right in your own backyard.
Malibu Chicken
Feeling a little tropical? Why not try some delicious Malibu Chicken? It is one of the most delicious grilling recipes around. For this recipe you will need several ingredients: 6 boneless/skinless chicken breasts, 12 thin slices of ham, 6 slices of canned pineapple, 6 slices of Swiss cheese, 1/2 cup of pineapple juice (the juice from the canned pineapple will suffice), 4 Tbl. of melted unsalted butter, 2 Tbl. of BBQ seasoning, 1 Tbl. of plain yellow mustard, 1 Tbl. of honey, 1 Tbl. of molasses, 2 tsp of Worcestershire sauce, and 1 tsp of chili powder.
Once you have all of the ingredients together you need to put one piece of chicken into a gallon plastic baggie. Pound the chicken until the entire piece of chicken is the same thickness. This will make it grill more evenly. Once done, remove the chicken and put it onto a plate and repeat with the rest of the chicken. Now you need to sprinkle the barbecue seasoning on both sides of each piece of chicken and refrigerate it for an hour or more.
While you are waiting you need to whisk the pineapple juice, molasses, butter, mustard, honey, chili powder, and Worcestershire sauce in a medium-size bowl until it is smooth. Set this aside.
After the hour has passed, it is time to let the grilling begin. Lay the chicken breasts and the pineapple rings out on the barbecue and begin grilling them. After about two minutes, turn them all over. Brush the sauce on the side of each piece (chicken and pineapple) that has been partially grilled. Flip in another two minutes and brush the other sides with the sauce.
Now you will want to put two slices of ham and a slice of cheese on top of each chicken breast. Drizzle with sauce and then put a pineapple on each stack. Close the grill lid and continue cooking until the internal temperature of the chicken reaches 165 degrees.
Honey Mustard Chicken
There are many grilling recipes with chicken, but this one is super easy and super delicious. First, you need 4 boneless/skinless chicken breasts. Now you simply combine 1/3 cup of Dijon mustard, 2 Tbl. of mayonnaise, 1/4 cup of honey, and 1 tsp. of steak sauce together in a mixing bowl. Set aside a small amount of this sauce for basting the chicken. Use the rest of the sauce to dip the chicken in and then place it on the grill. Once the chicken is mainly cooked, use the remainder of the sauce to spread on top of the chicken for a little added flavor. You will want to watch carefully to make sure the chicken will not burn, but always make sure to cook thoroughly to 165 degrees.
